Extra Virgin Olive Oil is characterized by being an oil produced during the first days of the campaign, from October 1 to November 15 (the production date may vary depending on the campaign). This oil is always packaged unfiltered, resulting in an oil with a more intense flavor and a dark green aroma.

It is a full-bodied oil, dense in the mouth, whose aroma is reminiscent of green grass, green branches, vareta or olive leaf. These aromas and flavors come from the main varieties that make up this blend: Manzanilla de Sevilla, Picual and Hojiblanca.
